The Guacamole Experiment... Recently i tried to make some guacamole from a recipe that called for a stone bowl and a pestle to grind the ingredients together... Not having the proper equipment, and not being very good about following recipes, i was forced to make my own version... The initial version included SIX serrano peppers, so it was a bit spicy (had it all to myself though)... and instead of grinding ingredients they were chopped fine, and the mixture was then mashed and whipped (by hand)... last night was the third round of revisions, after the first being a little too hot, and the second was good, but i made too much, and it turned brown on the top, still good but just oxidized, it unfortunately ended up in the garbage disposal... so here it is... 4-2-10 Guacamole v.3 Ingredients 2 Ripe Haas Avocados 3 Small Tomatillos 1/4 of a medium sized white onion 2 Serrano peppers a small amount of Celery Heart a splash of lemon juice Preparation 1. Cut the Tomatillos into quarters... 2. Roast the Tomatillos and Whole Serrano Peppers in a heavy skillet (iron), or grill them if possible... 3. Finely chop Celery Hearts... 4. After roasting the Tomatillos and peppers (blackend to your preference), chop them fine... 5. Split the avocados, remove the pits, then scoop out the flesh with a teaspoon... 6. Chop the onion to a fairly small dice... 7. Put the chopped Tomatillos and peppers together in a small storage container... 8. Combine the Avocado, a handful of the celery, a small handful of the diced onion in a medium sized bowl... 9. Mix in ONE or TWO teaspoons of the pepper tomatillo mix (you will have leftovers)... 10. Mash the mixture together, add a splash of lemon juice (to prevent oxidation)... 11. Stir (or whip) by hand... 12. Refrigerate... Makes approximately 1 1/2 cups... my wife doesn't like Cilantro, so i substituted the celery heart for that, therefore if you DO like Cilantro, you know what to do :-) This recipe from the arse-backwards kitchen of VeggieFreakBoy (aka The Naked Vegetarian)...
