This is something that I make often, because everyone enjoys it, and it is easy to put together quickly! If you modify the recipe, let me know so I can try that idea. Quinoa, black rice, and black bean dish

In a rice cooker,

1 cup of black rice
2 cups of Quinoa
4 cups of water
One 10 ounce can of low Sodium Black Beans
One 10 ounce can of Chick peas Drained
1 10 ounce jar of sun-dried dices tomatoes or bruschetta with olive oil
1 jar of chopped greek Kalamata olives - Drained

After cooking in rice cooker
Add pace Chunky mild salsa and Parmesan cheese to taste

Instant Pots are great for bean dishes and soups. I have been eating out too much lately but I think I'm going to try some vegetarian dishes more in mine.

Also, you can use dried beans which I think are healthier. Just add more water and cook longer. Lots of recipes on the internet.
