this week i decided to tribute the magic moment of cooking... so i decided to post this bulletin to ask you friens to share this week a recepie (if it easy to prepare will be best) and not just to say ham&eggs but to say why is special. i have one simple to start (i have mannnny) but my recipie is simple is poteoes and vegtables...in spanis the oriinal name will be "Papas con verdura" is realy simple to prepare, is special because i grewup with my grandma in a little and lost town in the middle of the sonora desert in mexico. In summer in the nights when it rain it was almost usual that the electricitie whent off, so my grandma lighted an oil lam and she prepare that dish for diner, she baked home made bread and beans and we sat there in the middle of the kittchen enjoying that supper and chating all night long, so everi time i cook this dish, i turn of the lights, i lite a candel , i open the dors and the windows, and i stay on silenc, recalling my grandmas voice and stories... the recipie is this... 1 or 2 potetoes (i like brown potetoes) cuted like if were for frenchfries 1/2 sliced onion (it could be white or yellow i do prefer yellow, is sweeter) 1 red juicy and fresh tomato 1 sliced green peper "chile verde" (if its anaheim much beter) salt and black peper to the taste, and a tb of frying oil. you preheat a pan, put in the oil and the potatoes, wait until the potatoes get a little tender, then put the onions in, stir, when the onions get crear put the green peper and the tomatoe, and the salt. cover the pan, the tomato and the rest of the veggies will liverate water, that will help the preparation, before you tur off the pan pur in some black peper. and thats all, one variation is to add some ham or spam or 'winnies' when you put in th potatoes... you will need fried beans and some flour tortillas or bread an a coup od coffe with cream and turn off the light so you can feel the magic of those days of my happy childhood. take care and thaks for reading
